Proust Coffee

Excellent coffee drinks & baked goods. While I ordinarily add cream to an Americano, after first tasting it black it was so good that I didn't want anything to interfere with its flavor. Rick's baked goods are all made in house. Selections (including gluten-free), which vary by day of the week, are uniformly terrific, whether they're scones, fruit tarts (some made with fruit from his own trees), cookies etc. All in a comfortable low-key setting with some available outdoor seating. A huge step up for Redmond's downtown!

My favorite coffee shop in Central Oregon from the second I first walked in. Rick cares deeply about his process and the quality of ingredients, and it shows. His espresso is rich, creamy, acidic, and lingers delightfuly. The rotating pastries are made in house and consistently improving. One of my favorites is the house-made "Pop-Tart" featuring his mother's jam recipe.

Though this coffee shop has a small store front space downtown Redmond, it seems like it should belong on a major high-end restaurant strip in Italy. You can taste the outstanding quality in the first sip and will be impressed by the freshly baked pastries that are creatively crafted from one-of-a-kind recipes. The shop owner is super friendly and community oriented and prides himself with excellence. The shop has a clean look with a modern, hip, comfy vibe, with corners etched out for either individual time or a larger gathering. This place is destined to become a new favorite, regular stop of anyone who visits.

Fantastic little coffee shop. We went in a couple weeks ago to get coffee and wound up having to sample a few of the treats. I'm not a big lemon cake guy but I tried a bite of my wife's cake and it was realllly good. The croissant was properly flaky and pulled apart nicely. The little frittata had bacon, scallion, bell pepper and cheddar cheese with a little dusting of parmesan.
