This place is a real hidden gem in the seventh. We ate there last year but it is my understanding they're under new ownership… And the improvement is stunning!
While it was very good last year both the food and the service in the Stabley Schomann itself, the menu has exploded with amazing new foods and an incredible chef!
My wife had escargot and I had foie gras for starters, both were perfect. The foie gras his homemade as is the fig chutney and both are simply delicious!
I had the Rosemary lamb and roasted potatoes and my wife had the salmon. Again, both were cooked to perfection and tasted wonderful.
My wife got the poached pear and Caramell ice cream and I had lemon sorbet that comes with a shot of limoncello and both were divine!
Top it off with great wine, great service and a wonderful atmosphere and new owner Regis really has something great on his hands. We will try to get back once again before we leave and will come back again and again on our subsequent trips back to Paris .

Really great place, met both waitresses but was seated next to the husband of one who was there to surprise her. It was so lovely to see.... And the food was fantastic
A master at making sauces I would recommend the duck, and pear with champagne.....the staff is superb and such lovely conversation and humanity here. The sauce for the duck is sweet but not so much as you do not taste its flavor so order the duck undercooked but this is my opinion.
Nous sommes venus le midi manger au Bistrot Chez France. J'ai juste suivi mes collègues, sous la pluie, il était 13h30 passé... Nous avons été accueillis à cette heure tardive, et avons commandé une minute plus tard...
J'ai passé un excellent moment... J'ai mangé en silence, c'était vraiment délicieux... Je n'ai malheureusement pris aucune photo, en profitant uniquement de l'instant. C'est sûr, je reviendrai.
Super plats et desserts délicieux. Néanmoins, il est dommage que pour le plat chaud la viande soit un peu maigre, on reste alors souvent sur sa faim sans dessert. Toujours un bon accueil et serveurs gentils. C’est une bonne adresse dans le quartier.
Du très bon et quelques points d’amélioration :
La nourriture de manière générale est très bonne
Salade périgourdine délicieuse avec juste ce qu’il faut de moutarde
Filet de perche fondant servi avec des légumes du soleil grillés juste comme il faut
Les profiteroles sont bonnes mais la pâte de choux pourrait être plus fraîche, elle est était tout de même bien ramollie
Le serveur était très aimable, le gérant un peu moins
Nous avons été servi très rapidement pour l’entrée, le plat et le dessert
Nous avons tout de même eu la sensation d’être « bousculé » pendant notre repas, le serveur puis le gérant nous ont demandé si nous avions fini de manger alors que nous n’avions même pas fini de mâcher.
Bref, un restaurant sympathique pour un midi, prix raisonnable si vous restez dans la formule midi, service rapide. Attention au prix des « extras » (boissons, nourriture non comprises dans la formule), le prix monte vite.

Dans son global, la cuisine est bonne. Qualité prix, c'est tout à fait convenable.
Ce petit bistro tient bien son nom. En revanche bémol sur l'aimabilité du gérant. Et c'est fortement dommage, car un sourire ne coûte rien.
Malgré tout je recommande ce resto
